This picture made the cookbook cover of the breakfast section! I love this recipe and what a great presentation! We eat with our eyes first! This recipie can be used for breakfast, lunch, dinner, or special occasions. I love healthy sides, so this is a kale sauté with nitrate free sausage-mmm! Here’s a tip in the recipe: bake the egg 15 minutes for a soft set which I prefer because you don’t want to over cook the yolks. Preferably a three minute egg is the healthiest way to prepare an egg- you don’t want to kill the nutrients in the yoke....high in protein and healthy fat!
